Grilled Pork Steaks

I've never had "Pork Steaks" before, so when a couple of friends came over with these for dinner, I took a close look at them. They seem to be from the back portion of the shoulder.

Having plenty of collagen, I instinctively new that I wouldn't be able to cook them over a hot fire, so I cooled the fire to a medium temperature. They came out perfectly moist and tender.



1. Prepare the steaks by rubbing with the oil, then coating with the blacken, salt, and pepper.

2. Start your grill, and cook the steaks at a medium temperature until they reach an internal temperature of 145 - 150 degrees. About 7 - 10 minutes per side. Don't overcook them, or they'll end up dry.

3. Place the cooked steaks on a platter, cover loosely with aluminum foil. and let them rest at least 10 minutes.


4. I've served these with "Onion Soup Mashed Potatoes, and Blue Cheese.
