Baked Flounder With Shrimp Picture
1.    Make the Sauce:
Slice the onion, and place in a pan with a little vegetable oil. Cook over med / high heat until they're soft, and translucent. Add the Sauce, Tomatoes, Italian Seasoning, and Garlic, stir it together, and let it simmer while you cook the rest of this meal.

2.    The Bread Crumb Mixture: Melt the butter, while you mix all the other ingredients together. Drizzle the melted butter into the bread crumbs while stirring it up. The bread crumb mixture should be just a little damp, and still have the texture of bread crumbs.

Place a light coating of this on the Flounder.

Place the flounder on a parchment lined sheet pan.

3.    Cook at 400 degrees, about 15 minutes. This should be just enough to cook this fish, and brown the top.

While the fish is cooking, you can start on the shrimp..

4.    Peel, and de-vein the shrimp.

Melt butter in a Teflon Pan over med / high heat. Add the Italian Blend and Garlic, then turn the heat to high and add the Shrimp. Cook the Shrimp in batches, not crowding the pan about 3 minutes per side. Just enough for them to turn pink.

5.    Let them drain, and cool on paper towels while you're waiting for the flounder to finish cooking.

To Serve:
Place some sauce on a plate, add the Flounder, then set the cooked shrimp on top of that.

6.    Leftovers are great too. I added a little more parmesan cheese to the top of the Flounder before setting it in a 350 degree oven for 10 - 15 minutes.

To Serve:
I set it on a bed of my Caribbean Fruit Salsa.
