If your looking for a new way to serve potatoes, this recipe for Rosti Potatoes is it.
It tastes great, and is real easy to make.
- 4 Medium, Red Potatoes, julienned
- 1 Medium, Onion, sliced real thin
- 1/2 Tablespoon, Kosher Salt
- 1 Teaspoon, Ground Black Pepper
- 1 Tablespoon, Butt Kickin' Blacken, Original Recipe
- 2 Tablespoons, Butter
- 2 Tablespoons, Vegetable Oil
1. Cut the potatoes into 1/8" x 1/8" strips I used a mandolin. Add the sliced onion, and spices, then mix it up with your hand.
Ron's Note:
If you don't have a mandolin, you could easily cut them into 1/8" strips with a knife. I've done it many times when I've forgotten to bring my mandolin with me.
2. Melt the butter in a Teflon pan over low heat, then add the oil. Add the potato mixture to the pan, being sure that it's not more than about 1 1/3" thick. Cover and cook on low for 15 minutes.
3. Flip them over, by placing a plate on top, then flipping. Slide the potatoes back into the pot so the other side can cook. Cover, and cook another 15 minutes.
4. To serve:
You can either slide the whole thing onto a plate, or cut in wedges right in the pan.
