This is more about using up leftovers than just a recipe. When you're cooking a meal, cook for having leftovers, as if you're prepping for the next day.
I had 1/4 of a head of lettuce, 1/2 a cucumber, 1/4 cup Spicy Honey / Mustard Salad Dressing, and leftover Grilled London broil all in my refrigerator. I was planning on having the london broil as sandwiches, but really needed to use up some of the stuff in my refrigerator. I Hate throwing out food.
This was simple (took less than 10 minutes to put together), and super tasty. I even liked the salad dressing so much that I wrote it up as separate recipe.
