Pistachio Pesto

Prep time:     Cook time:     Total time:     Yield: 6 - 8 servings

Pistachio in a Pesto was one of my better ideas. I love to cook things just a little bit outside the norm, and the great flavors of this pistachio pesto really fit the bill.

I've been wanting to make a Pesto for a long time now, but didn't have an idea of what to use it with. I've also been intriqued by the use of Pistachios. Here is a great way to utilize both, and have my need for cooking fulfilled. This is a great alternative to the standard pesto that most people are buying in stores, and it's Sooo quick and easy to make.

I used this Pistachio Pesto as a stuffing in a Pistachio Crusted Pork Tenderloin. The whole combination was perfect. The garlic flavor of the pesto, and the crunch of the Pistachio Nuts on top made a perfect meal.

  • 1 Bunch, Fresh Parsley
  • 1/2 Cup, Lemon Basil
  • 1 Tablespoon, Lemon Juice
  • 6 Cloves, Garlic
  • 1/2 Cup, Parmesan Cheese
  • 1/2 Cup, Pistachio Nuts
  • 1/4 Cup, Olive Oil, as needed
  • 1 Tablespoon, All American Steakhouse Blend, to taste

1.    Put the first 6 items into a food processor. Process until everything's broken up.

2.    While the processor is running, drizzle in the olive oil until a smooth paste is formed.
