Orange Marmalade, BBQ Sauce

This is a great Orange Jerked BBQ Sauce that's great when used on Wings, or as a Basting Sauce while your grillin'.

I would use this on Chicken or Pork. Just put it on during the last 15 - 30 minutes of cooking, or you'll end up with a burnt mess. The sauce is fairly sweet, and will burn fast. The oil adds a nice sheen to your finished product.

This version is primarily for use as a BBQ Sauce though, and is quite mild.

If you'ld like to "Kick it Up", you can add 2 Chipotle Peppers in Adobe Sauce. Just place them in either a Blender or a Food Processor, along with some of the Adobo Sauce. Blend until they become a paste, and add them to the Orange Marmalade Wing Sauce you've just made.

Another way to kick them up, would be to replace the Jamaican Jerk with my Fiery Hot, Jamaican Jerk Seasoning Blend. I know, you'll get a tom of fiery heat out of it.



  • 1 Cup, Orange Marmalade
  • 1/2 Cup, Low Sodium Soy Sauce
  • 3/4 Cup, Cider Vinegar
  • 2 Tablespoons, Butt Kickin' Blacken, Jamaican Jerk
  • 1/4 Cup, Honey
  • 3/4 Cup, Vegetable Oil
  • 1 large, Lemon, Juice only
  • 2 Tablespoons Mustard

1.    Place all of the ingredients into either a blender, or a food proccessor, including the Chipotle Peppers, if using.

2.    Blend it well, then simmer for about 15 minutes.

3.    Let it cool, and store in the refrigerator.

4.    You can use this either as a Wing Sauce, or a BBQ Sauce. Why not try it on some a Buffalo Chicken Sandwich?

Leftovers
Leftovers will keep in the refrigerator for a long time, and will provide other uses besides just using it on the grill.

Or, you could make Salad Dressings, or a Pan Sauce using this Wing Sauce as the base flavor.


    Creamy:
  • 1/2 Cup, Hellmann's Mayonnaise
  • 1/2 Cup, Sour Cream
  • 1/4 Cup, Orange Marmalade BBQ Sauce

  • Whisk it all together, and you've got a pleasant Salad Dressing.

    Vinaigrette:
  • 1/4 Cup, Balsamic Vinegar
  • 1/4 Cup, Orange Marmalade BBQ Sauce
  • 1 Tablespoon, Prepared Mustard
  • 1/2 Cup, Vegetable Oil

  • Whisk the first 3 ingredients together, than add the oil while whisking vigorously. The mustard will help the oil emulsify.

    As a Pan Sauce:
  • 1/2 Cup, Orange Marmalade BBQ Sauce
  • 1/4 Cup, Heavy Whipping Cream
  • 4 Tbs., Butter, Room Temperature

  • Reduce the BBQ Sauce to a syrup in a Teflon Fry Pan. Add enough heavy cream to make a sauce. Remove from heat and stir in the butter.

    The butter will give a pleasant shine to the sauce, thicken it a little, and add to it's richness.
